Trentodoc Metodo Classico: the sparkling wines from the mountains

Trentodoc Metodo Classico is a special sparkling wine because it combines a unique and particularly suited territory with the most fascinating and prestigious sparkling wine system. The minerality of the land, the exclusive use of only Trentino grapes, the manual harvest, the rigorous cellar process: an extraordinary combination of nature, technique, passion and time has gone into a glass of Rotari Trentodoc Metodo Classico.

The metodo classico

The oldest and most prestigious method for producing sparkling wine is based on the second fermentation in the bottle. This method has been known for over 400 years and is called Metodo Classico in Italy. Trentino, the heart of the Italian Alps, with its peaks and deep valleys, its lakes and forests and its multitude of microclimates creates the perfect environment for the grapes to become Rotari’s fine sparkling wine. All of our Rotari wines carry the seal TRENTODOC.

The “Base” Wine

The Chardonnay and Pinot Noir grapes are harvested by hand and undergo a soft pressing, in order to release all the typical aromas of the varietal. After sedimentation, the must is transferred to large steel tanks in the Rotari winery, where the first fermentation takes place at a controlled temperature (around 18°C).

Tirage

In spring, the base wine is enriched with sugar and yeast and bottled with crown caps. The bottles are then stored in a horizontal position where the second fermentation (“prise de mousse“) takes place. Rotari's fine delicate mousse is obtained by ageing on the lees after secondary fermentation.

Remuage

The bottles are rotated daily and gradually turned upside down to a vertical position, so that the sediment from the fermentation collects in the bottleneck. This process, traditionally done by hand with the help of “pupitres” (wooden riddling racks), is now done by machines called “giropalletes”, able to move 504 bottles at once.

Disgorging

The bottles, while still in a vertical position, are inserted into a cooling solution which freezes the neck of the bottle to about -25°C to -30°C, isolating the sediment from the wine. The pressure built up inside the bottle expels the frozen sediment from the bottle when the crown cap is removed, leaving the wine crystal clear. At this point, a dose of “liqueur d’expedition”, a blend of special wines refined in barrique, is added.

Bubbles from the mountains

In a varied composition of microclimates (Alpine, Continental, Mediterranean), the rocks of the Alps and the Dolomites descend into soils of extraordinary minerality. Cultivated with extreme care, every day, every season, they yield unique, quality grapes that are nurtured with ancient passion and state-of-the-art techniques. Time does the rest. This is how mountain bubbles are born.

Trentodoc Institute

A common institution to guarantee the quality of Trentodoc sparkling wines and promote it within Italy and throughout the world. Shared production rules and standards, which guarantee both the origin and the production system - with re-fermentation in the bottle and very prolonged contact with the yeasts - and allows only the best sparkling wines to become Trentodoc.

The style of Rotari

As bold as the rocks from which it grows, as patient as Alpine nature: Rotari Trentodoc is the Classico di Montagna. Where the alpine breezes temper its character, the rocks define it and the mountain sun gives life to a bouquet of colours, time runs through it, refining its aromas and flavours. An enchantment of refinement and lightness.
